3) You need to include other options in your menu. Some people are gluten-free. Some of us are vegetarian. Some are lactose-intolerant. You put your client and yourself at risk when you forget to add alternatives on the menu. Someone may come after you in a lawsuit over food that has gluten. 1 little mistake can destroy your business.

4) You need to have an estimate of how many men and women are going to be there. A good rule of thumb is to include an extra 2-5 individuals to the final count. That way you don't overestimate or underestimate the food that you want.
